Chinese Adzuki Bean Stir-Fry (Serves 2)

 
 

 

 

In this recipe I use fresh ginger.  It’s so good for you and I love it.  Use as much in this recipe as you dare!

 
 

 

 

Ingredients

 

1 med onion - diced

1 green pepper - sliced into thin strips

100g mushrooms - sliced

Fresh ginger - peeled & chopped (½ thumb size)

2 cloves garlic

½ chilli - freshly diced (optonal)

1 dsp Sesame oil

 

100g Cashew nuts

250g Get Real Adzuki beans

50g Waterchestnuts - sliced

100g Fresh bean sprouts

1 tsp Soya sauce

1 tbsp Oyster sauce

100g prawns (optional)

 
 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 


  1. Wok onion, pepper, mushrooms, ginger, garlic and chilli in the sesame oil (brown but don’t over cook).

 

  1. Now add all of the remaining ingredients to the wok and heat through.

 

  1. Serve immediately.
