Courgette & Adzuki Bake (Serves 4-6)

Great hot from the
oven with salad or your favourite vegetables. Also delicious cold. I cut the bake into thick slices and heat
them up again on the bbq – delicious!

Ingredients
375g Courgettes
125g grated cheese
1 large onion
200g Get Real Adzuki Beans
125g Self-raising flour
5 eggs
a little oil for cooking
Salt & Pepper
Grated nutmeg

- Set
oven to 190oC - 375oF - Gas mark 5.
- Remove
Get Real adzuki beans from freezer.
- Dice
onions and partly cook in a little oil.
- Grate
unpeeled courgettes coarsely.
- Combine
onions with courgette, adzuki beans, cheese, sifted flour, lightly beaten
eggs and season with salt & pepper and grated nutmeg.
- Pour
into a well-greased 1lb loaf or 8-inch cake tin (line base with
greaseproof paper if preferred).
- Bake
in the oven for 30-40 minutes or until brown.
