Couscous Jamboree

 
 

 

 

A fantastic meal to go - great for picnics and packed lunches!

 

 
 

 

Ingredients

 

Couscous Marinade:

 

125g couscous

300ml boiling water

200ml orange juice - warmed up

Zest & juice of 1 lime

Pinch of cinnamon

Sea salt

 

Stir-Fry Ingredients:

 

1 Tbs oil

1 red & yellow pepper de-seed & diced

1 small onion diced

2 courgettes diced

125g button mushrooms roughly chopped

1 or 2 cloves of garlic crushed

Fresh ginger peeled and finely chopped (use same amount as garlic)

 

Final Ingredients:

 

200g Get Real Adzuki Beans, (defrosted or heated)

Chopped fresh peach or mango

2 chopped tomatoes

Hand full of roughly chopped nuts (cashews & brazils are good for this)

Chopped fresh coriander,

 Mint or parsley

 
 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 


  1. Mix together couscous ingredients in a roomy bowl and leave to swell.

 

  1. Stir-fry ingredients together in hot oil - cook as little or as much as desired.

 

  1. Add stir-fry to couscous.

 

  1. Add final ingredients, taste for seasoning and serve while hot or chill and serve cold.
