
Hearty Chestnut & Adzuki Bean Casserole
(Serves 4-6)
This dish is
complete if you include the topping suggestion. Otherwise serve with potatoes or crusty

4 sausages (optional) 150g leeks 200g carrots diced 150g shallots 2-3 sticks celery 2 bay leaves 50g tomato puree 200ml white wine 400ml vegetable stock 200g chestnuts (I use cooked vac-pack) 250g Get Real Adzuki beans Olive oil to cook Black pepper & salt to taste Topping (optional) 150g fresh brown breadcrumbs Large handful of fresh parsley (chopped) Freshly grated nutmeg Ground black pepper 75g grated parmesan
Ingredients
1. Using a heavy casserole dish brown sausages and put aside.
2. Now brown the vegetables in two lots.
3. Return sausages and all the vegetables to the casserole dish.
4. Now add the tomatoe puree, white wine, vegetable stock, adzuki beans and bay leaves.
5. Add seasoning, mix gently and simmer for 15 mins.
6. If you are not adding topping, simmer for 15 mins until ingredients are cooked and serve.
7. To add topping, mix all topping ingredients together and sprinkle over the casserole.
8. Place in the oven for 20 mins or until golden brown.
