Quick Aubergine & Adzuki Layer (serves 4)

 
 

 

 

 

Ingredients

 

2 peppers - cut into chunks

2 Aubergines sliced

3 tomatoes - sliced

Get Real Adzuki beans

3 Garlic cloves - crushed

Fresh basil leaves

Parmesan shavings

Juice from ½ lemon

Salt & Pepper

Sunflower oil

 
 

 

 

 

 

 

 

 

 

 

 

 

 

 


1.      Fry the peppers and aubergines and set aside.

 

2.      Use half of the above to line an oven-proof dish.

 

3.      Season and squeeze over the lemon juice.

 

4.      Cover with the sliced tomatoes followed by the crushed garlic, ripped basil leaves and Parmesan shavings.

 

5.      Cover with a thick coating of Adzuki beans.

 

6.      Top with the remaining aubergines and peppers.

 

7.      Season, rip over more basil leaves & Parmesan shavings.

 

8.      Cook on a moderate oven for 30 mins.
