Quick Mushroom Bolognese (serves 1 person or 2 with wraps)

Ingredients

 

150g Chestnut or Open mushrooms - diced

2 ripe tomatoes diced

150g Get Real Adzuki beans

1 tsp tomato ketchup

Dash of worcester sauce

Squeeze of lemon juice

Salt & ground black pepper

Thyme (good pinch)

Garlic powder

Fresh basil leaves (optional)

Chopped parsley (optional)

  1. Wok all ingredients together.

 

  1. Cook over a low heat until the tomatoes begin to soften.

 

  1. Add broken fresh basil leaves or chopped parsley to serve if you have them.
